Harvest Sheet Pan Dinner

Don’t get me wrong, I love to cook… I just don’t love that sometimes it means leaving 20 dirty pots and plates in my wake. This sheet pan dinners is perfect for weeknights (or for lunch meal prep the next day!) and only uses one bowl and one baking sheet AND is ready in less than an hour.

INGREDIENTS

  • 1 lb brussels sprouts, bottoms cut, halved

  • 1 lb cubed butternut squash

  • 1 honeycrisp apple, peeled and diced

  • 1 pack Amylu chicken apple + gouda sausage, cut into 1-inch rounds

ROASTING SAUCE:

  • ¼ cup olive oil

  • ¼ cup coconut aminos

  • 1 tbsp dijon mustard

  • 1 tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp sea salt

DIRECTIONS:

  1. Preheat oven to 425F. Line a large baking sheet with parchment paper.

  2. Add all ingredients to a large bowl. Whisk the sauce ingredients together, and pour over everything in the bowl. Stir to coat everything well.

  3. Bake for 20 minutes and enjoy!
