Tofu Chocolate Mousse (Just Trust Me!)
If your sweet tooth is in an absolute uproar with the holidays approaching, we’re in the same boat. Add to that the shift towards soups and casseroles in the colder months, and you may find it difficult to hit your protein goals (30g at every meal!).
Instead of adding in more processed protein powders which I use in my smoothies, I looked for a sneakier- and tastier- way to get my protein in. This chocolate mousse has 10g of protein per serving, but you’d never know it! It does have to set in he fridge for an hour though, so plan ahead for tonight’s chocolate cravings. 👀
Protein Tofu Chocolate Mousse (serves 4)
INGREDIENTS
2 cups silken tofu
1/2 cup almond milk (I use Mooala or Almond Malk to avoid gut-disrupting additives and binding agents)
1 c dairy-free, semi-sweet chocolate chips (I use Enjoy Life)
1 tsp vanilla extract
1 tsp maple syrup
INSTRUCTIONS
In a glass bowl or measuring cup, place chocolate chips and almond milk in the microwave for 60 seconds, or until melted.
Add all ingredients plus the melted chocolate into a blender. Blend until smooth and transfer to serving bowls.
Place bowls in the fridge and allow to set for at least one hour. Then top with any desired toppings (berries or flaky sea salt!) and serve!
